Christmas Spinach Salad

3-10 oz bag baby spinach leaves/ mixed greens
1 cup crasins
1 small red onion, thinly sliced
1 cup toasted walnuts/pecans
4 oz feta cheese crumbled
1 pomegranate, seeded
1/2 cup fresh mint leaves

Vinaigrette:
2 large tomatoes coarsely chopped
juice and zest of 1 lemon
1/4 cup red wine vinegar
1 tsp. kosher salt
1/2 tsp. black pepper

Pulse above ingredients then add 1/2 cup olive oil. Drizzle over salad and serve.
